I think this guy says it just as good as I would. Pretty much hits the nail on the head:

There are a couple of people that have done some summeries as to why people hate the remastered versions. I'd like to go into a bit more detail.
CG Inserts:
Ok these really stood out like a sore thumb. Mixing new and old never really works smoothly. Most of the inserts were filler any ways that served no real purpose. I think one of the biggest eye sores was the added big dance number in Jabba's palace. That scene really had no reason for being there other then to say.. "Hey look what we can do with CG compared with the old muppets."
Scene edit/insert: There were a few scenes that were added or edited that comes to mind. First the addition of the Jabba/Han Solo scene. This was a scene that was intended to be in the film but was cut, then got brought back for the remastered versions. I never really saw the point of haveing the scene brought back other then to have a CG'd Jabba thrown into the original movie..
Next you have the scene I mentioned earlier with the dance number in Return of the Jedi. Good lord this was an eyesore. I really don't understand what point this served other then to piss fanboys off.
Third the infamous "Who shot first sequence." For a scene that last about 5 seconds it really pissed me off. For those of you that never watched the originals not only did Han Solo shoot first; he was the only one to shoot. Lucus changed it because he didn't want Han Solo to look like a bad guy by shooting someone in cold blood. Well guess what... he was a bad guy. He was a smuggler with a bounty on his head. On top of that the scene make no sense. In the scene Greedo fires at Han's head. Why would he do that? Greedo needed Solo alive in order to collect the bounty for him. It's the same bounty that Boba Fett talks about in Empire when he tells Darth Vader that Solo is no good to him dead.
Forth you have the scene with Jabba and Han solo. I feel I need to mention this mostly because it has to do with the "Who shot first sequence." When Han and Jabba are talking Jabba asks why Han fried Greedo. This line only makes sense in context to the original version because Greedo never fired. Jabba would probably have heard that Greedo fired on Han and never would have bothered asking that question. Sure this sounds like another minor gripe, but the more minor things that don't make sense the more problems arise.
Finally adding Hyden in to the end of Jedi was a big slap in the face to all the fans. This really pissed me the hell off. Watch in this new remasterd version why don't they just edit out Alec Guinness from the end and put in Ewan McGregor instead of that ending sequance. While he is at it Lucas can just go ahead and edit out Yoda from it as well and put him self in place of Yoda. That way George can give all the fans a good an proper Tea Bagging.
Growing up with Star Wars:
I think when it comes down to it all the "pissed off fan-boys" are in fact pissed off because we grew up with the movies as they were originally made for almost 20 years. I grew up watching them on VHS many times and when I heard they would be re-released in theaters I couldn't wait. What I saw disappointed me. Once the prequels started coming out I realized that in reality the remastered movies were nothing more then a huge advertising campaign for the prequels.
If after that people can't understand why we hate the re-released versions. It because all we really want is to be able to watch the original versions, of the original movies, without having to go a dust off a damn VHS player, all the while prayng that this won't be the last time we will watch it because this old hunk-o-junk will eat our tape.
You know Lucus says it would be too expensive to release the original versions on Blue Ray because of all the touch up work needed. You know that is complete bull shit. We don't care about that crap George. In fact I think it would be safe for me to speak for all the other fan-boys out there when I say we would prefer to have to original versions, in their original state. And for the love of all that holy please stop trying change things. In fact I recommend that George should never have a hand in anything Star Wars. Just ride out into the sunset and let someone else at the reins of Star Wars because no one could possible screw up Star Wars more then George Lucus has in the past 13 years. {end quote}
